Because they're fun. 
For me, it's an adrenal rush. I used to hate them, even passed up the opportunity to ride the Cyclone in Coney Island. A few years later I went on a loop one and it was love. Now the bigger, faster, crazier they are the more I love it. I even keep a list of all the coasters I've been on.
