only combat tutorials? I think there should be other adjustable tutorials to train people to dock without getting horribly killed and eventually try out cold entries with different ships.

There is in the full game. What you have is just the early build combat test scenarios that were used to test the game. This was basically the first versions we got to test.

They have done this at every stage new players have come in at since the alpha. Its just a little nice gift from frontier to warm up on before you get access to the proper build.
