So I currently have 38 ships stored on my carrier, with new variants coming in the future. Are players able to store one of every ship or do I have to buy a new carrier /j.

Previously when Frontier have introduced new ships they've also increased the maximum ship storage to continue to allow "one of each".
Sometimes it's taken them a few months to remember, though.

There's also the escape pod technique to get more than 40 ships aboard the carrier.
Well for most of us they still have plenty of time as only the fourth ship will take us over the forty limit, those who preordered Horizons might run into trouble after the T8.
Of course if they make the fourth ship a Panther Clipper the problem can be solved by making it too big to dock at a carrier so the limit wouldn’t apply.
