Would love to see some level of fuel management:

Thinking of the ability to dump a certain amount of fuel so that you can make an extra long jump, and the ability to enable / disable extra tanks (not the main tank).

Would suggest that fuel is used (or dumped) from extra tanks first which can only be disabled when they are empty - if they are disabled then buying or scooping fuel does not fill them (again so you can retain a longer jump range).

It would certainly solve a couple of issues I have encountered when exploring !!

+1 to the ability to switch off additional fuel tanks.

Sounds to me like being able to dump various quantities of fuel and controlling when you stop fuel scooping (just turn off your fuel scoop) would be sufficient without having to bother with managing individual tanks.

From what I can tell jump planning always assumes that your tanks are full, so unless you can disable a tank you will not be able to plan a multiple hop route making use of the extra range.....

Good idea and would be pretty easy to implement.
Just have the right UI module panel be able to be to ACTIVE, INACTIVE (won't refill or be used), DUMP (empties tank and produces a nice cloud effect around your ship), TRANSFER (brings up a option to pick the tank to shift fuel to).

I'm all for lots of little things that add depth to the ship systems. The UI is pretty well made and looks like it could easily accommodate a lot of these ideas.
