They could just be suited up with their helmet on. Only need Male and Female models.
That would do fine for me.

It would probably be a bit creepy. Pilot models don't have heads.

(I'm serious. If you stand up in VR and look at your seat, the body starts at the neck [uhh])

Absolutely yes but I would wait for proper 3d character models with animations and such.
