Never had it happen to me. I often drop out of supercruise to an empty instance to idle and have yet to see someone stumble across my signal source.
If I do this, I make sure I'm running nice and icy, as attention is the last thing I want when afk. I think that depending on your heat sig, you may appear as a USS to other super-cruisers (Not tested - can anyone confirm?) and may attract attention form npcs too (again, I've not sat around watching and waiting to test this out).
I like the thought of staying in game while making a brew - my commander is definitely the type to need a cockpit cup holder and zero-g mug
I just wish my ship could alert me to any new contacts while in the galley (Mobile app anyone?)

Thanks for the responses guys n gals, I decided to play it safe and log out. I just hate replotting my route. Much less of a hassle in 1.1 though![]()
I don't think NPCs stumble across you if you drop to an empty instance with no destination lock, but any players who were in supercruise with you before you dropped should be able to lock on to your FSD wake. No idea if new players jumping into that supercruise instance would see the wake or a USS though. Given that USS are randomly spawned in front of you regardless of speed, I don't think a player at sublight would show up as one.
One advantage to logging out instead of idling in game is you're not burning fuel or building up wear and tear either. I once left my ship flying on a random direction in SC while I went for a bit of dinner, and when I came back and jumped to a starport, the wear and tear bill was a bit of a shock. Made me reconsider ever doing that again.
