I love cheese, and I love learning about cheese so c'mon guys keep the names coming! I've learned a lot about cheese already!
 
Apparently, according to my amish milk fiend/friend, you can make different types of cheese depending on how long you let the milk sit, and what you do to pervert the cheese.

Where is Wensleydale cheese from?

It's a cheesy reference to Wallace's preferred cheese. A character from "Wallace and Gromit". The cheese itself is originally from North Yorkshire. :)

I'm in a strange mood today.
 
I used to love Canadian Chedder but sadly, too much salt now.

In Scotland they have a Scottish Chedder which tastes great and retains its flavour when cooked. Like so many of the great things they have up there, what's on offer down here, with the same labels, is just not nearly as good. (Frankly, it's like string.)

Currently I'm rather partial to somehting called Seriously Strong Chedder.
