Another cool thing to do (for those of us who aren't beta testing) is to keep boosting away from a station, staying parallel to another ship. Watch them as they engage the jump drive. It's quite cinematic. I usually do that when I'm not in a hurry to "get out of Dodge" carrying ​Illegal Cargo.

You can't. That's the "dismiss ship" automatic procedure (an option to secure your ship in space while you're wandering in SRV) that you see in action in this video.
