...And my record of never once needing the things, do I really need or want HSL's on my next ship?

A mere two doesn't really sound worth it.

I've needed to use several so far on this trip - keep running into nasty binaries that the 'Conda turns too slowly to avoid. Might be different for a Cobra IV.

You never know when you'll need one - to illustrate, I'd sometimes go exploring for months without needing one, then I'd spend two in a week. The reduction in ammo count doesn't really hurt explorers all that much since this is a rarely used item, but when used it can prevent a lot of damage. With them being usable in supercruise, their low mass, and the ability to boost your range with engineers, I fail to understand why bringing one or two of those is even in question. Better to have and not need...

I'm using an Asp for my next trip actually. Mk IV is being made into a pure miner now. It's best job.

The reason I'm asking is because I'm working out if I'd rather have a shield booster for defence against AI interdiction. I'm not great at combat, and my current paper build lets me have over 200mj shields, while still having over 30ly range.

72,000 or so systems and whilst one would have been useful on occasions, I've never actually used (and therefore never needed) one.

What do you mean "turns too slowly to avoid"? If you mean on jump-in, then try throttling down any time after the countdown starts. The UI will not update the throttle bar, but you will exit hyperspace at min throttle instead of max. Also, faOff defaults to min throttle instead of max on SC entry and hyperspace exit.

Well I've decided.

I'm confident in my ability to deal with stars.

I'll go without.

I was unclear. The 'Conda does not maneouvre quickly in SC and so the normal fast turns I would make to avoid a close binary are not as effective as they would be in a nippier ship. I don't mean that I ram the star on system entry. It's a drawback of the low agility of the 'Conda that I hadn't appreciated until flying a long distance in one.

As newman said you never know when you'll need a heat sink; you can go for a long way without one and then need several in quick succession. I didn't use to bother with them but I don't think I'd leave home without one now unless I was really pressed for mass or utility slots.

If you need them or not you will never know in advance :D

And ability sometimes is of no use. When you jump out with half of your ship dipping into a star theres not much you can do other then screaming and trying to get out of there as fast as possible.

I'm at Beagle Point and have have fired off 2 my 3 Heatsinks (but have 2 left thanks to a bug before 2.1)
The first one got fired at random without my knowledge - I just started the game and noticed I only had two. Eventually tracked down the binding (V iirc) and disabled it - most likely it was fired instead of zero'ing throttle.
The 2nd one I fired at Cmdr Dognosh during one of our chats :D A couple of thousand ly out and I fumbled over the keyboard - the first I knew was the heat dropping like a stone and I'm panicking thinking my engines are going offline!

To balance that view though, on my first run out, I hit a bunch of Neutrons and used a heat sink in anger to escape the gravitational lock one had over my ship (T6 at the time). On this run (in an Asp) I've jumped into a few binaries that have put me in the corona of both - I come barreling in on full throttle and seemed to have the momentum to escape with only minor 'fizzing' so no HS fired......yet

I used all mine long before getting to Beagle Point. Fell asleep and dropped my controller and another time I sat on my controller and fired off the rest :(.

I don't have any, never really needed them. The only time I would have used one, and took a small amount of heat damage as a result, was due to my own inattention. Jumped into a very close binary system but the star that ended up behind me was a brown dwarf and I didn't pay it much attention but it did cause my heat to rise ever so slowly and I didn't notice until it was too late to avoid a smidgeon of damage (1 or 2% of some modules). Would have been fine if I'd been paying attention and it's never been a problem accelerating out of the more obvious traps.

I do have a pretty manoeuvrable ship though.

I've used all my ammo for the HSL when I was on my way to BP. But, I didn't need it a single time on the way back!

A mere two doesn't really sound worth it.

I've only needed one once in 15000+ jumps. I didn't have one and suffered minor module damage which I repaired with AFMU.

Yeah, that's my school of though as well. Really needed only two heat sinks in 400,000 light years of travel, but those two were really needed. Since most of us don't have a lot power to spare, I prefer module damage prevention over repair.
