The OP is making the classic mistake of defining what's "worth doing/achieving" in the game as easily achieving end game content, ie: earning & A rating a Corvette, reaching Beagle Point, earning Triple Elite Ranking, etc, etc. Basically, he's just saying that the goalposts should be much (by the power of 1000x) closer together so that when he spends 30 minutes playing in an evening, for instance, he's done something more "significant" than rebasing his Cobra a few systems over.
I suggest that this game just isn't for him. Especially when the only parts of the game where he admitted where he had fun was at pew pew sites, which is obviously very limiting. So the game doesn't cater to his tastes, no big deal.
For me, what I love about ED is the massive scale, both in terms of time & space. Without this sense of titanic, mind boggling scale, I would have lost interest in this game long ago. So it takes time to accomplish things in this universe; the whole point is that you enjoy the moment in ED and don't get caught up in this mentality of "It's going to take me "x" amount of time to get that Anaconda and I'm not going to enjoy any of it until I get my hand's on one, and only then will the game be fun!"
Engage in activities you enjoy, and forget about everything else. If that doesn't work, there's a whole lot of other games out there that will probably cater to your tastes a lot better than ED
