I would also suggest dropping mulitplayer right now and work through some of the single player scenarios.
These introduce new ships systems to you as you progress through them and will give you a good handle on what is going on. When you know where everything is come back to MP and that's where the real fun begins.
Don't take this the wrong way, but it doesn't need nerfing. What you need to do is practise. Learn to fly the ship better, make use of its features. Fly smarter in essence.

Unfortunately, I can only advice to keep practicing. Single Player scenarios are not difficult at all.
Have you tried different controller devices, e.g. KB/M?

I start by pushing all power pips to weapons and zapping him as hard as I can. Then control my speed into the blue zone to maximise my turn rate. He's got the drop on me for turning though so I'm not going to catch him unless I do something.
I used the vertical down thruster to take me out of his turn loop and get back on his six. A bit more zapping and he's history.
