Like you OP I left the game for a while....just after Engineers dropped in fact as it was a total nightmare deployment
I've just started playing again but I'm 10k ly out in the black so the new content is not relevant right now apart from a few quality of life upgrades which are nice.
Planetary landings are fun for a short while but in essence you have it correct - barren planets, very little to do, each one is a reskin of the last. There are exceptions (POI, settlements etc in the bubble) and you can get some great screenies and some cool scenery but not much else.
As for engineers, it put me off so much I left the game, now it seems you 'need' to use them if you are going to survive any sort of encounter with NPCs or Cmdrs. It's a real pain as I loved my combat but from what I read and hear it's not really possible to be effective without modding your ship extensively. When I get back to the bubble I will have the joy of trying to work out mods, RNG and material gathering and whether I even bother with any of it....I get the feeling I probably won't.
For now though I'm just enjoying flying around and exploring....well away from it all.

Having read through my post I have to say it seems rather negative. I didn't mention once how much I'm enjoying the exploring, I love flying the ships, seeing the sights....it's what ED does very well....and it's brilliant. That, and it sort of feels like coming home....somehow
