I had Henrik Larsson sent after me as a mission NPC. I could never shoot him.

In a bizarre twist of fate, Mace Windu gave me the location of a pirate lord only a few hours ago. This is probably a frame up...

Actually there are a few reasons why his lightsaber is purple. In the latest description it is because Mace Windu is considered the most valuable warrior, his unique purple weapon serves as a reminder for both the enemy and the jedi.
The enemy will fear the greatest warrior of the jedi order and the ally will be able to follow the leader easily.
In an older description, the purple lightsabercomes from a special crystal that he earned while training as a padawan on the planet Hurikanean, he then used this crystal to create the lightsaber himself.
The special crystal, also named Hurikanean, is mostly known for it's ability to penetrate defenses more easily.
EDIT : yeah you'll tell me Yoda is stronger, and he might be. But he's not considered as a warrior but more as a wise master... a spiritual guide if you will.

It was purple because Samuel L Jackson told George Lucas he wanted a purple lightsaber because it's his favourite colour
