If there really are 400 billion+ stars in the simulation of the Milky Way, I would be surprised if we've got about 1% yet. That doesn't mean it is easy to find an undiscovered star - you need patience more and more now, as further and further must be travelled.
Quick tip, if you're travelling somewhere interesting (e.g. a nebula, black hole or distant tourist beacon) don't go in a straight line. That's what everyone else does and all the systems along that straight line will have been discovered (if you look at an ADSM map of where people have been. it's basically all straight lines connecting the "interesting" stuff. If you're gonna travel, say, 600lys somewhere, then pick a random direction (diagonally downwards for example) and go that way for about 100lys first before turning towards your final destination.
