Other than Witcher 3? Wasteland 2 if you're into old school top down RPG's in the vein of Baldurs Gate, or XCOM 1 or 2 if you like strategy. All single player.

Your system spec is similar to mine other than I'm using an AMD FX 8350 so it should be handle them no problem. :)

Yeah I wasn't sure how it would handle Witcher. If it copes just fine though then I may as well get it.

But yeah, older games too. When it comes to single player age means nothing to me.

What sorts of games do you like? Survival, story games, open world?

Anything. My only requirement on genre is that the game be a good example of its genre.

The Witcher 3 runs just fine on an Xbox don't forget, so your PC will handle it fine [yesnod]...Can't get much better an example of genre right there...
 
As said above you should try Witcher 3 - this game ruined rpg`s for me, nothing is as good as this crazy ride. And it gives you at least 100h of content with out dcl and optional stuff.

Oh - well; in that case Half Life 1 and 2 - the Goldeneye FPSes of the PC which kickstarted them all. (and they'll run on a potato) :D

Also being an avid RPG nut meself, may I also recommend any of the Ultima games up to 8 (not 9 as that was very p** and Online which is/was an MMORPG) and well as Baldurs Gate 1 (which has been recently remastered) and 2. (word of warning though, they're mostly from the 90's so expect pretty bad graphics)
 
Its from 2010 so will run at super ultra on your pc and is dirtcheap on Steam. Plus its the definiton of epic:

That trailer is a pretty good description of the game. A open sandbox on a tropical set of islands, which basically exists just so you can do the most silly and outrageous stunt kills. Ever thought about stealing a military jet, then skydiving out of it into a helicopter, crashing it into a building just after you parachuted into a supercar? This is your game. :p

I let my mate play it on my Xbox once. (He was staying over for a few days). I didn't pay much attention because I was playing Elite on PC while he was doing that.

So it runs well on an Xbox? Well then... Looks like I have a new game to pick up!

Your PC will handle W3 just fine. It's better than the one I had when W3 came out, and mine handled it without a single hiccup.

If you've still got time after the witcher 3 (assuming you like it) then :
The original Deus Ex - flawed but brilliant
Dragon Age Origins
Dishonored - especially if you don't play as the nice guy
Any of the X-Wing and Tie Fighter series (Tie Fighter's probably the best)
Freespace and especially Freespace 2 with the FSOpen mod (http://scp.indiegames.us/)

With the other suggestions that'd be several years worth of gaming for me :)

FWIW, I hate the Witcher with fervour. Didn't last 2 hours on my HD, never understood the hype.
Yeah, it's not for everyone. The earlier ones didn't click with me and W3 took a few goes.

If the most primitive expression of hate is nothing you'd like to meet in games you'd better stay away from the Witcher.
but this I don't get. None of the main characters are hateful?

I've got a selection in different genres based solely on epicness ;)
Prey; excellent FPS in the vein of System Shock
Brigador : Up-Armored; underrated isometric kindabutnotreally duelstick shooter
Mount & Blade Warband; excellent medieval combat/war sim.
To the Moon; rpgmaker walking sim. Not much in the way of gameplay but an amazing story.
Shovel Knight; retro inspired platformer.
FTL; roguelike space game.
Euro Truck Simulator 2 ; a truck driving sim. In Europe.

The Long Dark - survival game, frozen post-environmental apocalypse - but really, really good - keeps you coming back for more if it's your style of game
Skyrim - "Skyrim"
Fallout NV - easily the best of the Fallout 3+ series
