GTX 980ti = VR Ultra ??

Using the Occulus rift what quality level am I likely to get.
Mid? High? Ultra?

Accepting I might get the odd to the 90Hz standard

Depends what HMD & SS you try to use use. Ultra with a 980TI, yeah no problem, I ran ultra with a 1070. Ultra with a decent HMD & SS setting on a 980TI, nope. Just about achieve 90FPS solid with Ultra with high SS/HMD on a overclocked 1080TI and overclocked I7 7700K.

For me personally, running good SS & HMD setting is the most important part of having good visuals in ED
 
Depends, if you are ok with being in ASW and 45fps mode, mid to high.

If like me and need full 90fps as much as possible..
Then it would be low and SS of 0.8 and hmd q at about 1.5.

Entirely personal preference honestly.
You would need to experiment and find your own settings.

Personally I dont use SS in Elite at all, I find it introduced microstutters and that's much more annoying to me than a little twinkling or aliasing, which you still can't get rid of even at an SS of 2x.

Am running SS 1 HMD 2, Ideally I'd like to crank it up to SS 1.5 HMD 2

The game is blurry at low SS/HMD levels. As mentioned above, you can get away with running no SS (0.5) And 2 HMD. The game will still look good.
 
When I had a 980Ti, I ran HMD at 2.0 and SS at 0.65, and it looked pretty good and ran smoothly. I don't think I ran it at ultra, shadows were turned down a bit and a couple of other things. But then I maintained 90fps most of the time.
