As we have seen in the gameplay videos for two of the islands when looking at the top down view in blue of the park we can see the border limits of where you can build and terraform. What I'm wondering is can you expand these boards to give you more room for a bigger park and is there more chunks of land within one island that are linked up by the monorail giving you a few small parks (in a way) on one island or does each island only have one area of whatever odd shape that you are given to build your park in?

I don't think there'll be different areas for you to build on, on the same island. I think the text on the website is just to point out, that the landscape will have mountains and rough terrain. It would be nice though!
No the building area's are the boundaries and you cannot expand them.
All islands except for Isla Muerta will have one area.
Also, Isla Sorna will have a huge map to build on, as does Isla Nublar the sandbox island.
At least thats what we hope. We havent seen the maps of sorna and nublar. Or got a real feeling for the relations of the maps. At least i cant calculate realy good from the videos.
At the pre-order conference they said that there was one island where that you would need to use the monorail to connect the three area's together.
We seen Nublar, not the map but the island and to me it seems to look like one huge area.
