I see the Buckball race thing on this thread and it got me wondering how many other (non-dev intended) mini games or challenges in ED there are.

Buckyball racing.
Quickest leave/dock through mail slot.
Quickest race around station.
See how high up a mountain you can climb.
Circumnavigate planet in SRV.
Golf scoring planet mapping.

Did I miss any? Please add to the list.

Try Yamiks party piece... Boost to station grill, flight assist off, turn about face and enter the grill backwards.
