Dropped cargo vanishes before I can scoop it.

This happens way more times than it just being a one-off 'quirk'. I'm playing Solo and get interdicted, I submit and destroy the offending ship. It drops cargo and/or materials. I lock on to the materials (not interested in the cargo), line up on the floating box and approach it with cargo bay open. Then poof they all just disappear from the scanner. If I'm lucky I can just about manage to grab one before they disappear.

Yup - when you target things there is a %age displayed under the cargo - that's how much integrity it has left.

Get a collector limpet controller if you're harvesting minerals after a fight. Tell them to ignore cargo, and they can grab all the materials pretty quickly assuming you're close to the debris field.

You can speed up collection with your ship by moving forwards and backwards through the scattered field of materials or cargo, in order to get the loot in front of you. It is a lot slower trying to turn the ship to face the loot while moving forwards all of the time.

Also, in order to speed up collection, turn so the underside of your ship faces the items-to-be-collected by the limpets, as they'll always try to maneuver underneath you so as to access the cargo bay and deposit collected items there.
