How much should it be?

And from what I can see Cyberpunk is £50 for the standard edition so don't understand the above.

The price has been adapted to my country. I can buy Cyberpunk for ~35$. Frontier games always have global prices. So, average resident of my country will not buy this game.
It's sad because I can afford to buy, but i can't create a community with other people in my language.
I bought a game, but it is not fair, sorry.

Originally I wanted to wait till the gsme would be released, but I needed to preorder it, although I really wanted to see some images of the deluxe animals, at least the gazelle didn't look as great as the other animals presented till now. Anyway, I'm really keen on seeing the video of the demo!

Once the game is released, the deluxe edition will still be available with all the goodies but the beta access (since the game will be out xD). So yeah, you would get the animals.

Just pre-ordered! This is the first game I've pre-ordered in living memory, been waiting for a worthy successor for Zoo Tycoon 2 since before I was born.

I pre-ordered the Deluxe Edition last night on the Frontier Store within minutes of receiving the email from Frontier that Planet Zoo was available to pre-order. I am so excited and very much looking forward to the beta. The game looks amazing.

Did this mean non-Deluxe gamers will get the opportunity to add the animals at a later date?

It's the words "at launch" that suggest everyone will get them later down the line anyway.
