Right now I have 0% litter, and it's been like that for quite some time now, so it seems to be working really good for me 
One of the first lessons I learned in this game is the importance of trashcans and benches.
This is one area of my zoo, and when it comes to benches and trashcans, almost all areas look like this;
As you can see, there are never more than a few meters to a trashcan, and even though it looks kinda ridiculus, it works
I also divide my zoo into workzones (usually one zone for every staff member, or group when it comes to shops).
Right now I have 12 janitors (they are apparently called caretakers in english) in my zoo (see pics above), divided into 6 workzones, two for every zone, all of them fully trained. I also make sure that they have access to at least two staffrooms unless the staffroom is in the centre of the workzone. And I always choose the "staffcare/healthcare" option (not sure what it's called in english) for all staff rooms exept the ones used for shop staff.
