I don't think it will be available in the Workshop because Frontier doesn't support modding for Planet Zoo

Actually, there do exist "another" way of solving it: Nexusmods.

I know, but Frontier doesn't like Modding so if you post a link in the Forum it is really likely for the Post to be deleted. I would've liked to help People with Phobias to change the Icons of some Animals but it seems like all Files regarding a Species are all in one big File and because someone could use it to make the Franchise-Mode easier, it isn't allowed to make Changes to it. Even though I will not use Mods for Planet Zoo, I would like to see the Model when a Texture is added to it
