do dinosaurs attack guest cars?

Yes, but only carnivores, and the only tour vehicles vulnerable to them are the Ford Explorer vehicles of the Park Tour structure from the JP era.
I've only been able to see this happen with large carnivores, but I'm not sure about small carnivores.

Like how @gabeluna27 said, only the JP Park Tour vehicles take damage from dinosaurs and would be attacked by large carnivores. Herbivores will not seek out to destroy the vehicles but they are still able to damage them if come into contact, it won't be as significant as carnivore damage.
Gyrospheres are immune to damage, as well as the Jurassic Tour. I do hope the latter would be updated to have potential damage done to it by dinosaurs.

You know, there is something I did post a few months back that talked about such an idea for the two JW era tour attractions.

The Return to Jurassic Park DLC has introduced the first ever tour attraction in which its vehicles can be destructed by carnivores. When this happens, the Park Tour goes into an "emergency mode" and become disabled until fixed by a ranger team. So because of this, I think it's a good baby step...
(To quickly clarify something in there, when I said the gyros were "ankylosaurus tail proof", I was referring as to how the unintended tail club impact in the first Jurassic World film didn't completely break the glass, the fact the tour voice will say it can "withstand" such an impact, and that herbivores wouldn't directly attack tour vehicles as they don't with the vulnerable Park Tour cars.)

And I agree on the gyrosphere remaining impervious to damage, it is a game mechanic we wish to rely on if we do not want destructible tour vehicles and a means to enter carnivore exhibits.
