Which would explain to me why, after returning from the toilet I discovered that I am no longer parked in a station... I am instead now on a prison ship with a buy back cost of 28 million!!!!

I was not wanted anywhere and the only cargo I had were limpets :/

there are logs for ED but from the player side iirc it only records network not other things like ship destruction

if your using a tool\app which links to a site like inara.cz then you can see ship transactions such as combat

if your ship has suffered from an unscheduled rappid dissasembly you need to contact frontier support iirc theyll either refund the cost of the ship or restore if there was an issue

edit: inara appears to only show combat destruction no those caused by ramming etc

Yes, there is a player log - at least if you're on PC. It's an XML file called Journal-something-or-other - the most convenient way to access it is through a tool called EDDiscovery.

I thought it could have been that I had accidentally launched, but pretty sure I hadn't. I was at a planet station, docked outside watching stuff while eating.
Went to the toilet, came back.... bÜgger!

Oh well it was only 28m, still got 870m left

Yes there are logs on PC:

%userprofile%\Saved Games\Frontier Developments\Elite Dangerous

And if you read them you will likely be amused by the tale they tell of you launching, then loitering, then being shot to death. They will not reveal the involvement of any cats tho.
