I've updated VoiceAttack (VA) today to the latest version and I'm now observing that whenever VA is running, stereo output to my AirPods Pros stops. When quitting VA, output immediately comes back again. So it seems that VA "takes over" this device. Anyone experienced that as well and has an idea how to fix this?

It seems this has nothing to do with VoiceAttack. It's just that Windows 10 recognizes the AirPods Pro with two different profile (1 for stereo output but no mic and the other with bad mono output but mics). Depending on which profile is "activated", I can choose between good output but no mic or bad output and mic. 
The time when it did work, it was the 2nd option it seems.
When trying a separate mic, everything works (so far...) I'm sure I'll run into some issues again... Bluetooth audio and Windows 10 don't seem to go well together.. ^^

Them's two Bluetooth profiles for thingies with speakers (and no microphones) and thingies with a speaker and a microphone. The first one permits (usually) decent audio quality, albeit with badly defined delays, the second one only supports phone speech audio quality (which can be reasonably good if the whole chain supports wideband speech) with low delays and a back channel for the microphone.
Some device pairings work very well (like iPhones with AirPods) others... don't (like Apple with basically anything else). Windows and your mainboard firmware and the BT chipset on your mainboard probably go for the lowest common denominator approach, which has the best chance to yield a result with (almost) any pairing, but usually won't exactly excel at any of them.
