I don't know if you can do it at the new fleet carrier insides, as I haven't been able to visit one, but when the bar tender asks if they can get anything for me at the bases, I'll like to actually get a drink please.

I think that's the end goal further on, Frontier showed us the behind the scenes work where they had a motion capture session with a bartender moving around.

Yes, I agree. Great idea to get tanked up on booze before hoping into your heavily armored ship and zip around the space ports. 
It would be cool if your ship controls became less responsive based on alcohol purchased/consumed. And if ship insurance was cancelled if it was destroyed while flying under the influence.
Personally I rather have a drink irl while playing the game.
