There's an option called something like "Orbit lines" which toggles a bunch of graphic overlays.
Can't recall exactly what it gets rid of though.

aye = turns off the orbit lines.
ctrl + g I think turns off the HUD elements

Honestly, I wish there were more detailed options for the HUD.

Ideally, I'd like to get rid of orbit lines and all the various names and brackets but just leave the exclusion zones visible around stars and planets so I don't crash into 'em.
