Let me say one word : Python. :)
A Python is what a Cmdr like you will adore, although you need more credits, love is not cheap, She will take you into a new sphere, it IS the most versatile all rounder there is.

Exploring without hard points is like grilling without pants.
 
Engineering is not a grind unless you make it a grind. Certain Engineers are unlocked by just playing the game. you say you do mining so you will have certain materials already. Start with Farseer. It will require a trip to Maia and the planetary base Daniella's prospect for 1 ton of 100k meta alloy. Take that to her and run some of the upgrades for her, not the most exciting of action packed screens, but when your asp jumps 42 ly with a full cargo hold you will open up more distance worlds. Don't grind multiple engineers unless you set the goal too. mix up your styles of play all helps relieve the apparent grind.

As for your question. Asp Ex is a great ship with a big pay jump to the python. I would suggest diversifying your portfolio of ships and set some for specific jobs, i.e viper 4 is a great tanky 10mill all A rated combat ship.

Also use your imagination when market trading, delivering basic meds from a boom to outbreak system can make 3k a ton nothing illegal, to be the savior of the people where they will erect statues in your honour for your selfless act etc etc etc.
 
I never "grind" Engineers.
I play the game, doing what i feel like doing at the time, and if i see a material i don't recognise, I collect it. Or if i see ones marked as Rare.
Sometimes I'll just take collector limpets bounty hunting and scoop random things up.
Then if i decide to Engineers something, say a new missile rack, I'll check inara.cz (IMHO, this info should be in game FD!), and see if i can do anything.

If I'm missing something I don't often come across, like Tin for example, I will land and drive about for a bit. I enjoy it anyway, and I'll purposely pick an interesting planet and landing spot to do it from.
Last time, I landed my Anaconda on a tiny, but very tall plateau in the middle of a perfectly flat canyon, and jumped my SRV off it, just cuz'. :p
Even though there was plenty of room down below. Lol
15 minutes of crazy driving later, I'd collected all the Tin I needed, plus loads more materials I use for ammo synthesis.

Then off to the Engineer, sorted out my missiles, and continued my aimless wandering. Lol
 
If you want something a bit more unique, try the iClipper.

The only thing holding it back from being an excellent multi-role is that restriction on small pads. Other than that it's got the internals to happily do most jobs, pretty neat combat ability which is more readily available to combat casuals than the python - which notoriously requires good throttle control to turn well, where the iClipper can change facing in a fraction of the time - and is fast.

uh, you're overcharging for basic medicine in the midst of a health crisis, I doubt they appreciate exorbitant profiteering
