Non-scale planetary faces are available in the normal system map. Is the orrery perfect, of course not. Is it good enough, I would say yes. It will go a long way for me to plan my path through the system if should wish to map all the planets.

The "normal" system map is not a map, it's in fact a visual list of bodies...

There needs to be a third view, "Combined", which is orrery positioning, but with the "increased scale" of the standard/original view.

I'm exploring pretty deep in the Beta servers, since I like this exploration system a lot more. I've probably traveled about 10kly since I started using it.

Will my progress be reverted upon the official release of the beta?

Nothing you do in beta will carry over to the main game. If you find something in beta using the new tools, you may be able to go to the same place & see if it's already there in the main game though.

When 3.3 is released. This is expected to be before the end of the year, probably before Christmas. IIRC Patches are usually released on a Tuesday so the 18th of December is as good a guess as any but the official date has not yet been published.
