Colonization - How does one choose the economy of the station

I believe the 1st station's economy will always be colony (makes sense).

You should be able to choose the economy for subsequent stations.
 
If you look at the "details" tab for the selected station when you're picking which one to build, then it will tell you what sort of economy it has (and also its various other effects on system parameters like security level, maximum population, etc.)

Coriolis, Orbis and Ocellus are always Colony - though this may only apply to the first one you build, and there may be ways to change it later.
Outposts vary in economy depending on which type of Outpost you pick.

Presumably a station economy of "Prison" won't work like a prison ship, which is unfortunate. Otherwise players might finally be able to fix the issue of being teleported to the Pleiades if they commit a crime in Witch Head.

Pleiades is far closer to Witch Head than the bubble. So I don't think that would "fix" anything even if you could.

Building a working prison in Witch head would. Where can we build colonies currently? 15ly from any inhabited system, or just those in the Bubble?

I don't recall "Prison" being an option anyway (they may have been thinking of the Military economy base?) as it's not a normal economy type.
(You can get "Prison Colony" as a government type, but that's separate to the "Detention Centre" one used on the actual prison ships)

it may vary from system to system. I wish I had screenshot it. There was also Military, separate from Prison
 
Is there any documentation (either official or community) that covers the differences between the different outpost/settlement economy types, in terms of their characteristics, what they add to the system, how they impact BGS differently etc?

For example, does creating a military economy outpost mean you get NPC security around the outpost/in the system?

I'm just looking to get a deeper understanding of what the choice actually leads to.

What it actually means to give a system "+3 Tech Level" we won't really know until much later, though.

It does appear to be possible to affect the relative widths of factions' economy/security state bars with this - though again, how that works we're a long way from pinning down.

Military orbital outposts and military Odyssey settlements tend to have additional security patrols compared with a normal outpost/Odyssey settlement. That's probably true of ones you construct this way too.

The Military outpost also gives "+2 Security Level" which will likely have some effect on supercruise traffic (more authority ships, fewer pirates/smugglers), though how visible that is might not be immediately obvious as it might depend on whether it flips the system over the Low/Medium or Medium/High thresholds.
