I've got this game for several games now and was wondering if everybody just learns all of the keyboard controls or if there are controls panels available for this game. I found some old threads where people built control panels but I didn't find anything recent.

What is up with the graded shading on moderator posts - doesn't look good at all.
Do you have "show signatures" disabled by any chance? The flare only displays when I consciously switch my sig off.

For ED (and other VR games) I only use the programmable buttons on my HOTAS and augment them with additional support from Voice Attack (as the keyboard and any aux keypads would be difficult to use with an HMD on).
For other (non-VR) games I use a Belkin N52TE programmable gamepad and just map the games default keys to to the buttons I want. I never change the game's default key mapping - just make a unique gamepad profile for each game. This way, if I re-install the game, or run the game in multiple locations or PC's, then I just need to load the profile and I'm ready to go.
I think the N52TE has largely been discontinued but here are some other similar programmable gamepads:
