Just like the title says. I expected to use the monorail as a substitute for the paths and create pockets of guest areas and let certain dinos free to roam around but the first one I built said " needs to be connected to a path". I was very disappointed but then I read that people made those pockets and connected them with monorails..

They do indeed. The path can be short, but it has to go somewhere. From the station to a hotel and the usual stores would be good enough.
But I can make a human enclosure with mono station, hotel and Gyro station in a large dino enclosure ??
Yes you can. Providing there is (a) connection (either monorail or path) to the entrance gate, you don't have to have a path running around your entire park; the monorail system will do. This is what I've done on Sorna; created four 'outposts' with a monorail connecting them.
All I'd be weary of regarding your proposition is ensuring the Dinosaurs don't break into your hotel area.
