They turn dormant if I remember it right, and will get active (at least bounties) if you get scanned in the system again.

this is correct (bounties turn dormant...). fines get wiped afaik (please correct me, if i'm wrong - i neither get fined or die very often).
The 6000cr ones last for a week. You have to move on to another system or they will get reactivated when you get scanned, and then you will be wanted again. The 200cr ones last for 8 minutes. Jump to the next system, wait a bit, and then you can come back and pay it off as a fine.
Some fines become 6-day bounties if you don't pay them off within 12 hours, so always best to go back and clear them.

The other day I got a bounty for ramming a 'mission changing NPC' to death. 5000 credits, so I turned around and tried to re-dock and met a little opposition, which brought my hull down to about 15%. So I jumped system, repaired and went back. Still wanted of course, this time, I did my normal docking procedure and got in ok. Can't pay the fine, so I finished off the pirate mission and left the system. If I want to go back to the said system, I just need to be extra careful as those Allied security ships, may want to kill me. Not sure if I can pay it off, after the 7 days and not really bothered either way.
I always found that a bit weird. I want to get to the station to pay off a dormant bounty but get scanned and killed. You have to sneak in the pay off the bounty. I guess the game isn't aware of your intentions in that respect
you can't pay off bounties (anymore - since 1.3.), you have to wait till they turn into a fine. even with dormant bounties it is like that.

Just to make it clear, bounties don't disappear when you get killed. They become dormant, which means that you can go anywhere freely but the systems that issued them. While they're dormant, you can go back, as long as you don't go anywhere where you'll get scanned, so you can use stealth tactics or go to an outpost to dock, where there's no feds or scanning. The more bounties on you (dormant or active), the higher the chance of interdictions and random attacks from bad guys.
