Does immunity do anything?

Size: Controls the size of animals. Doesn't do anything important, but some players like having larger animals.

Longevity: Effects animals' lifespans, to an extent.

Fertility: Arguably the most useful. For males it controls how long it takes for a female to conceive, for a female it controls the number of offspring.

Immunity: ???
I know it's supposed to effect how often animals get sick, but I have never seen it do anything.

Size also affects appeal. Larger animals have higher appeal.

And immunity does affect how often and hiw severe animals get sick, but if you manage your zoo correctly they never get sick anyway.
