Currently running:

Top Weapon: Burst Laser small hardpoint G1 (gimble)
Under: 2x Pulse Laser small hardpoint G1 (gimble)

I tried putting a machine gun in this mix but found the above to be better at taking stuff out.....

I am worried about the quality (G1) though - and not sure how to get better/where to get better weapons....Is it worth throwing missile launchers or railguns into the mix?

Assuming you've got the powerplant to support it, a Railgun is an effective and skillbased (if using fixed) way of dealing some high-impact damage to an enemy, so I'd recommend that if you can aim it.
As for a Missile Launcher, I'll assume you'd want a seeker rather than dumbfire one. They do decent damage, but have low max ammo and are somewhat prone to getting you in trouble (eg, I fired at an enemy who went out of range, then I targeted a Security Vessel and it went after them instead).
As far as Class 1 hardpoints go, you can look around for some better quality ones, but I haven't seen much over D grade. Have a look in High-Tech & rich Industrial stations for them, if you feel inclined.

Either way, I find just going ham with Lasers is definitely an effective method.

I do feel quite safe, but have been taking on some much bigger targets lately and it's quite the grind, and quite dangerous at times

I might try and retro fit a railgun and see how it goes....yep, my power etc is managed well, and I'm upgrading as I go...

Ten minutes later I was taking down an ASP - NPC wanted status.....Federal went after him too, but when I was making a pass at the ASP, the Fed shot me....and I received a wanted status! argh
Anyway, got the asp down to 5%, my shields came back online and I went in to finish him off....the asp done a weird manoeuvre, turned 180 degrees instantly, said sommit on comms like "I'm taking you with me" then he blipped so fast and smashed into me - proper suicide kamikaze!!! My ship blew
