Those details are for cockpits, he has yet to post details for the Kinetic Flight simulator, and won't post until some more interest has been raised.

How do these things work for those flying FA off?
It believe they are linked to your flightstick inputs. FA off won't make a difference.
It looks really cool. Hopefully we will see a constructors video soon. I wonder what he used for a chair? Cannibal an office chair?
