Top of the list, though not specific - at least 2 more New World Primates. For sake of the wishlist I'll go with:

Black Howler Monkey
Squirrel Monkey (any species) - I just prefer the Squirrel Monkey over the Spider Monkey, but I realize the Spider Monkey is much more wanted.

After that the only thing I would call essential is a Coatimundi species.

So that's my 3

Quasi essential:
Tree Kangaroo species - if you need a specific species for the list I'd go with Goodfellow's Tree Kangaroo, but it doesn't necessarily have to be that species for me.

The rest is not essential to me, though weighted somewhat with personal likes. I can go into them but I wouldn't want them to get merged in with the "essential" animals like you're asking for. So really, just the 4 of the above.

For discussion and inspiration: The others though:
Brazilian Porcupine
3rd New World Primate - We'll go with the Golden Lion Tamarin
4th New World Primate - Let's go with the Emperor Tamarin (yeah over a Spider Monkey species, really don't care for them lol)
Sulawesi Bear Cuscus
Aye Aye
North American Porcupine

I'm not going into the medium/smaller birds that would likely be exhibit animals. That would be a whole list unto itself.

I not goes with the important order just how they came to my mind.
1. Aye-aye: Probably the weirdest mammal in Madgascar.
2. Coquerel's sifaka: Both the apperance their leaping jumping skills differs them from other lemurs.
3. Goodfellow's tree kangaroo: A unique and pretty tree-dwelling marsupial and also more common among EU zoos nut still a rarity.
4. Sulawesi bear cuscus: I just want a cuscus and this is the biggest althought the spotted cuscus probably would be more known.
5. Golden lion tamarin or emperor tamarin, pied tamarin or any tamarin or marmoset species I just go with this three bc the golden lion have a famous saving history in zoos the emperor has unique looking, the pied is probably have both.
6. Squirrels: I go with 2 species the european red squirrel is well known fairytale and folk stories squirrel, the other is the large Black giant squirrel one of the largest non flying suirrel.
7. Flying squirrels: Its probably harder to animate but Red and white giant flying squirrel.
8. Red-shanked douc one of the prettiest monkey species.
9. Pine marten: A tree climber mustellid.
10.Tayra: Also a tree climber mustellid but a larger one with more unique apperance
11. Bolivian squirrel monkey: Squirrel monkies are common among zoos I just choose this one bc I like their black cap and the black tail end.
12. Brown spider monkey: A critically endangereds spider monkey species in zoos also the creepiest.
13. Southern tamandua: A tree-dweller anteater.
14. North American porcupine: A well known North American animal.
15. Virginian opossum: An other probably more famous american marsupial also the only native marsupial of Noth-America.
16. Northern Luzon giant cloud rat : A giant tree dwelling rat which also more-less common in zoos aslo nicknamed sometimes as panda rats.
17. Greater Gliders: Any from the three species: They look like giant gliding teddy bears. Like a living plush.
18. Yellow-bellied glider: An other large and cute marsupial.
19. Mantled guereza:A unique well known African monkey species.
20. Owston's palm civet: A unique looking, endangered viverridae which also can be found in zoos. And we really don't have much species from the viverridae family.
