I bought a Turtle Beach Velocity Flight Desk because it looks pretty amazing. I am having a hard time with key bindings. What are the changes of getting a profile for that HOTAS?

How do you find your device GUID? I assume its someone on the device in device manager (on of the properties).
It's not a commonly used stick, so I doubt it.
You can find it using USBDeview. Alternatively, you could bind a button on the stick to create a custom binds file, then unplug it and load the game.
The game won't be able to find the device, so will load the default mouse and keyboard bindings. There will be a binding errors log in the same folder as your binds file, where the game leaves its complaints about not being able to find devices.
The solution to the "failed to find GUID" issue is simple. Launch ED, open up the blank profile, and then change something that involves your HOTAS. Close everything down. Go to the bindings folder and open the new file. Grab the GUID from that file (which is the current GUID). Copy and replace in the bindings that isnt working.
