My only reservation is that I barely trust docking computers. Giving the NPCs the means to burn through all their fuel in a minute or so, and the ship for that matter, would concern me.

Lets start small and give them the new ships first. I have yet to see a NPC flying a Python MK II, Type 8, Mandalay.Why just combat taxis though? Why not all taxis? Or all NPC ships? I feel more and more like The Chosen One when playing this game as updates progress.

That would actually be an amusing addition to the game!Given the high level of skill of the taxi pilots, I expect that an upgrade to SCO would lead to some spectacular displays of self detonation, lithobreaking or other equally amusing* premature endings to one's ride.
