flight assist or not?

Should I be using this? I now appreciate that I can flip and maintain focus on a target for longer without flight assist on but then find it harder to hold targets in ceosshairs. What do the players who are much better than me use?

And what about roll correction?

I'd say thats a matter of personal preference. Flying without FA is, like you are stating, way more difficult. I mapped it to my stick as a 'hold' feature. So, basically I use it to rotate on the spot (or something) and when I need to aim i release it again.
 
Most just use it briefly as a toggle to get better roll, and then turn it back on before the target gets in the crosshairs to let the ship readjust, giving them more precision. There's a few that don't, but FA off is a lot less forgiving, as you've found out. Try as you're turning to just bump it off for a second and let it back on, and you'll see how it affects the turn. Using lateral thrusters instead or in addition to will also aid in the turn. Each pilot has their own preferences, that's what makes player encounters exciting and tense.
 
It's much more satisfying to fly with FA off but like you said almost impossible to aim.

I'm going to experiment and figure out whether toggle or hold is the way to go.
