does research continue to progress when game is paused or do you have to have the time running for it to be completed?

would he handy to start a new zoo, and pause while building enclosures etc, and have mechanics research while building to unlock the new structures, but can understand if can not do this, as could be seen a a form of "cheating" the game

For research, the Vet or the Mechanic needs to be in a Veterinary clinic (I think) or Workshop.
If he's not in any of those buildings there won't be any research.

When paused nothing happens, thus no research is done.
