I'm doing delivery missions, where I'm delivering data or supplies to space stations so I can practice navigating, flying, taking off and landing with my side winder. But the auto docking is sort of defeating the purpose for me. How do I temporarily disable the auto docking/launch?

Turn the module off in the Modules list in the Right panel.

In the left panel under the "ship" tab you can also turn auto launch and auto dock on and off independently of each other (in case later in the game once you've mastered docking/launching you want to, say, manually dock, but auto-launch so you can visit the gal map and set a course/ plan for how you want to run a stack of missions to multiple systems)
When I'm looking at "advanced docking computer" in right panel, it had the option to set priority to 1,2, or 3. Is that what you're talking about? If so, do I just set it to 1?
'select' the module and you can deselect it to make it inactive
