In reply to the OP I think you can make challenge where you want it with ED.
I don't like flying god ships and rolling over NPC's so I don't. Smaller ships make for more interesting and challenging combat. If you choose to fly an engineered big ship then there is little to challenge you, but for me it's a choice.
There's a very high skill and knowledge cap for combat if you want it.
Exploration, I've not been on a proper trip yet. After waiting since beta maybe Q4 will entice me out into the black but even now looking at some of the things explorers know there's a challenge in having the knowledge. However it seems from looking at explorer threads there's still challenge there after the knowledge is gained, not combat or SRV driving challenge but still something and that could apply to trading, mining etc as well.
With any game/activity you'll get to a point where you have enough skill and knowledge to feel like much of what is presented isn't a challenge, but i do think that with ED there's enough being added to find the right level of challenge for yourself. At least for me there's always something I'm wanting to improve.
