Good fun and exciting when you you don't know what you're doing, and very satisfying when you do and get it right.
A couple of things that might help: The Viper is not the most newb-friendly ship. If you look at your vid, you'll see that the multi-cannons often don't fire, or only one at a time fire. That's because of their placement. A DBS has much better placement an't it's stats are nearly the same as the Viper., except that it does a lot more damage because the target is always in the arc of fire of all weapons.
Secondly, you must practice your pip management. You need to get it to the point that you do it without thinking. When your brain has it fully automatic, you need to practice using your throttle and lateral trustees right.
My beginners combat YouTube series would help you a lot. They're a bit long, but there's a lot of advice to pack in to each one. They're neither professional nor monetized. I just made them to pass on my experience to guys like you. If you have time, start with this one:
