Is it possible to see the desktop in the game when using a helmet Oculus Rift S ?

If its similar to the CV1 check out tip #22. Using the built in oculus virtual desktop.

The Oculus way sounds good.

The closest I got with Valve Index was a software called OVR Toolkit but that caused other problems due to the way it runs. So I've just given up on the feature for now.
