Ironically, Eve was originally
inspired by Elite built for an earlier internet age in the absence of a good Elite successor, in order for it to synchronise that kind of game-play online it's deliberately not first person. You can do all kinds of things with command and control game-play because it's not a complete real time synchronised experience for each pilot, they aren't dodging weapons fire by making split second control decisions. It's essentially stats being passed between clients not simulation. If you expect any developer, CCP or Frontier to evolve a real time simulation the same way your fresh out of luck and probably not aware of the limitations of your computers network connection the same way you are, perhaps, about your GPU.
The reason a true first person EvE does not exist is still the same reason that EvE wasn't made as a first person sim in the first instance.
Elite Dangerous may not be a true first person Eve but Op is perfectly entitled to enjoy it as an alternative first person game inspired by the same thing as Eve (the original Elite)
