I’m using block zones and are using them correctly and it is still not letting me have 2 trains on some roller coaster.

Can you share a screenshot? Make sure that Block Sectioned is enabled in the coaster settings too.

What coaster is this? And i mean the full circuit. But maybe also block station

And make sure to put like a normal track piece between block sections and make sure they are long enough for the entire train

a 4m block section is enough for the train, doesnt need to be as long as the train itself :)
as for OP, could you upload the blueprint and share with us so maybe we could try to help a better?
 
To have 2 trains I think you need 3 block sections. Always one more block section than the number of trains. I usually have 1 immediately heading into the station and the brake run coming off it. Then one other somewhere in the layout.
 
Been there :)

Make sure you set your LSMs to 'Function also as block section' or so, somewhere deep down in the edit mode of the LSM parts. I believe it only functions on holding lsm launches (makes sense in some way) and not rolling launches.

Many people forget that the lift hill is also a block section and if you don't use one, you have the issue that you are down one blocksection.
