I've found a Tutorial for creating Plazas in Planet Coaster and in the Video there was also shown that it is possible to hide Benches in Scenery-Items and the Guests are still using it. I would really like to build some Plazas in my Park when the full Game releases. Had anyone tried this in the Beta?

it uses the exact same mechanics as planet coaster... so yes its possible.

You can make big open plazas in Planet Zoo with careful use of the pathing grid tool, as well as place items piece by piece to customise the scenery for your guests
When using the grid it would only be square plazas though, wouldn't it? Not round one.
The grid tool only has square paths, but after you've placed the square pieces you can play around a bit and create the shape you want (like the video of Silvarret OP posted).
It takes some getting used to, but once you take the time and know how it works it becomes quite easy to work with.
It is possible to build a plaza that has rounded corners using the path grids. It may not be perfectly circular.
Since PZ is closed currently and the path building system is similar I will show this in an image from Planet Coaster: In Planet Zoo you will also want to uncheck the box where it says something in regards to squared edges.
It is also possible to make nice smooth curved edges.
