Heh - that takes me back 30 odd years - there was this Aussie nurse who introduced me to Vegemite - and one or two other things

(s)he just smiled and gave me a vegemite sandwich

(she lent me her car too when mine was broke - lovely girl :D)

In the interests of science I decided to conduct an experiment. I put a small qty of the brown nectar on a flat surface and then tapped it repeatedly with my flat knife. It didn't go white but it did go an interesting shade of beigey cream - rather like some high waisted flares I had many decades ago in the 70s!

lol. Impressed you had a go!
I reckon it's air bubbles but would happily stand corrected if someone more scientific could explain.
