And Findus is an appalling, cheap, exploitative processed meat giant. I'm glad that IKEA, who chose to use such an abominable company, got what they deserved in terms of bad publicity. IKEA is rolling in money, they could have done something good in terms of their laughable restaurants, but they chose greedily.

I get what you are saying, but IKEA didn't know what Findus were doing; yes, they were cheap, but other than that, IKEA didn't know the inside process of things going on at Findus.

IKEA were not guilty, other than choosing something cheap. There are plenty of "cheap" brands around in Sweden, so... they picked the wrong one and did a responsible thing when the whole thing was exposed.

Please oh please explain to me with my middling intellect why it is good game design to never be told in game that certain kinds of missions will wind up with you destroyed by the station you're undocking from?

I am pretty sure that what you say is a bug. Missions should tell you that the passenger(s) going to a specific destination are wanted and thus, you need to smuggle them in.

I have experienced the same thing you have, with passenger missions. There are plenty of threads around here about the same topic.

For now, I will not do passenger missions because of the fact that the needed information about them is not described.

So, yes... it is a bug; in what why does that render this game "unplayable" in the way OP mentioned. I mean... if you defend the OP, who clearly only spent 30 minutes in the game, I wonder what your agenda really is?
